Mashed Potato Dumplings

Although dumplings are already a near perfect food, I dare say that they are made better when they are fried with a slurry of rice flour to create a crisp, lacy, skirt.

These mashed potato gyoza were fried up with a parmesan skirt. a good use for your thanksgiving leftovers.
